Lamb is classed as "Mutton" when the sheep is over 2 years old. Most lamb is framed naturally (i.e. they are not generally intensively farmed) and feed on grass. If you’re worried about the animal's welfare whilst being reared buy "British Lamb" as the standards for animal welfare may be higher in the UK than some other countries.

Lamb should be hung for 2-3 weeks to improve the flavour and tenderness.
